Summer Apricots - Abundant In Utah!

Nothing says "summer in Utah" like home-made apricot jam! - especially in the dead of winter.  I love a cold January snow day with skiing, sledding or snow shoveling - and then coming inside to warm myself with buttered toast and sweet, summery, golden apricot jam!
