Recipes for Garlic and Garlic Scapes!

Early and mid June is the time that garlic plants send up their scapes - stems with a flower buds.  These scapes should be cut so that the plant can put the energy toward growing the garlic bulb - under the ground.
Garlic scapes are tender and delicious with a mild garlic flavor.  The nice folks at Green Mountain Garlic have created a page on their website devoted to cooking with garlic and garlic scapes.  The scapes are harvested now and the garlic bulbs should be dug up in the last week of June or the first week of July.  Here is a blog post about harvesting garlic.
